Introduction

Ingredients

4 cups of water
1 cup of lentils
1 tb. olive oil
2-3 cloves garlic
1 medium onion
1 tsp. cumin (optional)
1/2 tsp. salt
1/3 cup lemon juice
parsley for garnish
Directions
1. Bring the water to a boil and add the lentils. Then reduce the heat to medium-low, cover and simmer for 30 minutes.
2. Meanwhile, heat the olive oil in a frying pan. Add the garlic and onion and cook for about 3 minutes.
3. Add the onions, garlic, salt, and cumin to the lentils.
4. Pour it all into a blender and blend it together. You might want to do half at a time.
5. Put lemon juice and another half cup of water in the blender and blend with what has remained on the sides. Scrape the sides and blend again.
6. Mix the lemon juice and water into the soup. Add a bit more water if needed.
Makes 4 1 cup servings.
