Number of Servings: 24

Ingredients

    1 cup whole wheat flour
    1/2 cup white flour
    1/2 tsp salt
    1 tsp baking soda
    1/2 cup vegetable oil
    3/4 cup brown sugar
    1 TB vanilla extract
    2 TB soymilk
    1.5 tsp ground flaxseed (mixed with 4 TB water)
    6 oz semi-sweet chocolate chip (vegan)
    1.25 cup quick oats

Directions

Mix flour, salt, and baking soda.

Mix oil and sugar until creamy. Add flaxseed mixture. Add soymilk and vanilla. Stir until the color is uniform.

Slowly stir in flour mixture. Add oatmeal and chocolate chips - mix well.

Place in heaped tablespoons on ungreased cookie sheet. The chips do not stay in the batter well, so you may have to replace a few that fall.

Bake at 350 for 12-8 minutes. The cookies will still look moist, but not wet. You should be able to lightly touch the tops of the cookies and your finger will stay clean.

    Very Good
    These are very good! However I found the thinner the cookie, the better... when they are too thick they tend to be a bit dry. But the thin ones were great :) Thanks! I plan to give these out for holiday gifts! - 12/20/09
