Introduction

This recipe was adapted from navy bean pie. It has a very dense, moist texture and has a nice nutty sweet taste that resembles pumpkin pie. Do not over cook ! Ingredients

    2 eggs, lightly beaten
    1 cup non-fat evaporated milk
    2 cups cooked and mashed navy beans ( canned beans is fine although I prefer cooking my own)
    36 teaspoons splenda
    1 teaspoon cinnamon
    1teaspoon nutmeg
    1/2 teaspoon salt
    1/2 ginger
    1/2 clove


Directions



1. Preheat oven to 424 degrees.
2. Combine eggs and evaporated milk in a bowl.
3. Add beans , sugar and all spices.(use a food processor)
4. Beat at low speed until well blended.
5. Pour into a shallow pie pan.
6. Bake at 425 degrees for 15 minutes.
7. Reduce heat to 350 degrees and bake for another 35 minutes or until knife inserted in center comes out clean
8. Serve warm or cold.
9. Non-fat whipped topping or non-fat vanilla ice cream is a great addition to this pudding.
