Introduction
I make this near the end of the week with my fresh veggies that are about to turn. So that they do not get wasted. Ingredients

4 cups chopped broccoli (fresh or frozen)
2 cups cauliflower (fresh or frozen)
1 small onion chopped
2 medium carrots sliced
4 cups chicken broth
2- 5oz cans chicken
16oz Velveeta Cheese cubed
Corn starch to thicken if you like (it is calculated for 1/8 cup)
Directions
I usually throw this in my slow cooker on high for 4-6 hours. Put everything in and wait for it to be down. But you could cook it on the stove top as well. The corn starch is optional but is calculated in calories. I serve with crusty french bread
