Ingredients

    Leftover Chuck Roast (9 oz?)
    1-150z can diced tomatoes
    1 Cup or small can tomato sauce
    16 oz package of frozen mixed vegetables
    Leftover veggies from the roast (we had red potatoes, carrots and green beans about 1/2 cup each)

Directions

Dump all into a large pan. Simmer for 20-30 minutes until veggies are soft.

Makes 3-4 big servings

    Incredible!
    Great Idea. I used what was left over from the cooking light basic pot roast recipe. I only added 48oz tomatoes and added 1 can of beef broth to make it juicier. Delicious. - 1/18/09
