Ingredients

    One can of White Beans
    Olive oil
    2 medium cooking onions
    3 cloves of garlic
    1 package of frozen spinach
    10 Frozen Turkey Meatballs
    2 - 3 cups of low sodium chicken broth

Directions

Put the oil in a large deep fry pan on medium heat. Cut up the onion and put them in the pan. Cook the meatballs in the microwave according to the package. Cut them up and put them in the pan with the onions. Add pepper to taste (optional). Wait until the onions are soft and reduced slightly. Use a garlic press and put the garlic in the pan. Cook only for a minute longer. Cook the Spinach in the microwave and put that in the pan. Then sauté it with the rest of the mix. Put in the white beans and the chicken broth. I vary the amount of broth depending on how I want the consistency. Let it simmer for 20 minutes.
