Introduction

This is a YUMMY mexican dish! This is a YUMMY mexican dish!
Number of Servings: 1

Ingredients

    1 lb. Lean Ground Beef
    1 can Refried Beans
    Corn Tortillas
    Cheddar Cheese Grated
Veggies of choice (Tomato, Lettuce, Onions) I chose lettuce (you will have to add the Tomato & Onions in your tracker, if you did them, I'm not adding them to the ingredients for the recipe.
    1 tbsp garlic powder
    1 tsp cumin
    1/2 tsp. salt

Directions

In a large pan brown the beef in a little bit of water on medium heat. Once it is all browned, dump into a colander to drain the grease and water. Add spices, turn the heat to low until rest of food is done, this allows the meat get the taste of the spices mixed in.
Prepare your beans in small pan or microwave them.
In large frying pan pour about 1 tbsp of light oil, let it heat up on low-medium heat, once it starts to bubble a little use a small piece of a tortilla, drop that in the oil, if it starts to fry up quickly then the oil is ready to start using to fry your tortillas. Place 1 tortilla in the pan let it fry up, flipping it over every few mins, take out of pan once it is golden brown. Do the same with the rest (however many you think you might need) P.S. I hope I explained this ok, for those of you who haven't ever done this!
Grate your cheese & cut up any veggies you're going to use.

Once all the food is cooked it's time to eat!

Place 1 fried tortilla on a plate, get a spoonful of beans, spread those around on the tortilla, place a spoonful of meat on top of that, spreading it around carefully. Add cheese, lettuce, tomato, onions on however you wish.

VERY SCRUMPTIOUS!
