Ingredients

    6 medium summer squash, thinly sliced
    3 tbls. smart balance light buttery spread
    1/2 medium onion, finely chopped
    1 tsp. black pepper

Directions

In a 2qt. microwave safe dish:

Layer one third of the squash, sprinkle with half the onions and 1/3 tsp. of pepper then dot with 1 tbls. of the buttery spread.

Repeat layer once more.

Top with last third of the squash, sprinkle with 1/3 tsp. of pepper and dot with 1tbls. buttery spread.

Put lid on dish and microwave for 15 minutes on high.
