Ingredients

    1/4 C. Fiber One Cereal, original ground in food to bread crumb consistency
    1/4 C. Kraft reduced fat Parmesan Cheese
    1/4 tsp Seasoned salt
    1/4 tsp garlic powder
    1/8 tsp freshly ground black pepper
    2 Tablespoons FF Skim Milk
    2 1/5 C. (1/4 inch thick) zucchini slices
    Cooking spray

Directions

Grind Fiber One into bread crumb consistency. Combine first 5 ingredients in a medium mixing bowl, stirring with a whisk. Place Milk in a shallow bowl. Dip zucchini slices in milk and then dredge in dry mixture. Places coated slices on an oven proof wire rack coated with cooking spray; place rack on a baking sheet. Bake at 425 degrees for 30 minutes or until browned and crisp.

    I used some frozen sliced zucchini from the garden last summer and was really surprised. Didn't expect it to be that good. The thinner slices made crisper chips. I will definitely make this again! - 2/5/09
