Ingredients

3 large eggs whites (room temperature)
1/8 tsp cream of tartar
6 tbsp granulated sugar
6 tbsp Splenda granular
6 tbsp mini-chocolate chips
3 tbsp crushed sugar-free peppermint candies (about 6)
1/4 tsp peppermint extract (optional but recommended)
Directions
Preheat the oven to 225 degrees
Line a cookie sheet with either parchment or foil
Place egg whites in a grease free bowl. Add cream of tartar and beat until frothy. Slowly beat in sugar and then Splenda, 1 tablespoon at a time until egg whites are stiff. With a spoon, fold in chocolate chips, peppermint and extract.
Drop meringue by a tablespoon (one per cookie) onto the cookie sheets. Place in oven and bake one hour or until dry to touch and easy to remove from pan.
Serves 12 (2 cookies per serving)
