Ingredients

    Ground Turkey - 2 pounds
    1 large onion - cut up
    3 medium Zucchini, cut up
    3 scallions, cut up
    Kosher Salt
    Pepper
    2 Large Tomatoes, cut up
    8 oz sharp cheddar cheese

Directions

Brown the turkey along with onions and zucchini and scallions. Season with Kosher salt and pepper to taste or according to health restrictions. Then when turkey is brown, drain and pour into 9 X 13 inch casserole dish. Cut up tomatoes and lay on top of meat mixture and cover liberally with cheese. Bake at 4oo degrees for 30 minutes. Remove from oven and let stand for 5 minutes. Eat and enjoy.

    It turned out quite good! Let me know what you think after you try it. The only thing that I would do differently is perhaps put half of the cheese between two layers of the meat and veggie mixture. So that there is two layers of cheese.
