Introduction
Homemade applesauce is both simple and a great way to use up fresh apples. Two pieces of equipment will make this a simple and healthy recipe. You need a slow cooker and a food mill. Mine is made by OXO. I use this WONDERFUL kitchen tool for creamy mashed potatoes, sweet potato pie and apple sauce. You don't have to peel or core the apples. Just cook them, and the mill will do the rest of the work!

Ingredients
-
10 cups of apples
1/4 cup granulated sugar (taste the apples. If they are already sweet, then skip the sugar)
1 Tbs of apple pie spice*
*You can make your own spice mixture of cinnamon, ginger, nutmeg and allspice. Use whatever you like. Ideas are below:
Apple Pie Spice #1
1 Tbsp. ground cinnamon
1 1/2 tsp. ground nutmeg
1 tsp. ground allspice
1/4 tsp. ground cloves
Combine all ingredients and seal in ziploc or vacuum seal bag (or jar).
Apple Pie Spice #2
1/4 cup cinnamon
2 teaspoons nutmeg
1 teaspoon allspice
1 teaspoon ground ginger
Combine all ingredients and seal in ziploc or vacuum seal bag (or jar).
Apple Pie Spice #3
4 parts cinnamon
2 parts nutmeg
1 part cardamom
Combine all ingredients and seal in ziploc or vacuum seal bag (or jar).
Directions
Wash and cut each apple into quarters. Don't bother peeling or coring them.
Place 1/2 cup of water with the apples, into your slow cooker.
Add desired spices.
Cook at low for 6-8 hours.
Using a food mill (trust me, this is the best kitchen gadget you'll invest in), spoon apples and let the food mill do the rest.
Applesauce is a healthy alternative in baking (using less sugar) and makes baked good moist. Stir applesauce into yogurt or oatmeal as a healthy sweetener.

This "home made" apple sauce is EXCELLENT; you don't have to watch it much except to stir occasionally. I made 2nd batch today & is just as good. Even hubby liked it, and OH the aroma in the house. Good, Good, Good. - 10/5/08

Thank you for posting your positive comments. I edited the recipe to show options for making your own apple pie spice (why buy it, when it's cheaper to make your own!)
