Ingredients
-
-1 to 2 lbs of BS Chicken Thighs
-3 bay leaves
-about 10 turns of the pepper grinder
-2/3 bunch celery, sliced
-2 cups carrots, sliced
-1 package Ronzoni Healthy Harvest Whole Wheat Egg Noodles
-12 cups water
-12 tsp chicken soup base
Directions
1. Place everything, but the noodles in a large pot over High heat and bring to a boil. Reduce heat, cover and simmer for 45 to 60 minutes. (This may take longer if you didn't thaw your chicken completely.)
2. Remove chicken. When chicken is cool enough to handle, cut meat into bite-size pieces.
3. Return chicken to pot over high heat and bring to a boil. Stir noodles into pot. Simmer until noodles are cooked, about 10 minutes more. At this time I normally have to add a bit more water and soup base. Normally, between 2 & 4 cups of water and an equal number tsp of soup base.
4. Serve with warm crusty bread or grilled cheese sandwiches, if you can spare the calories YUM!!
Makes 8 servings
FYI-if you like a bit more chickeny flavor you can always add some a bit more chicken base. The base only has 15 calories per serving, so if you add 1 or 2 tsp to the entire pot then the impact to the dish's calories won't be that big of an impact to the individual serving.
