Introduction

A filling side dish that can be used in burritos or along side most mexican food. A filling side dish that can be used in burritos or along side most mexican food.
Number of Servings: 4

Ingredients

    1 cup minute rice, raw
    1 cup salsa
    1/4 cup water
    1 can corn, drained
    1 can black beans, drained
    1/4 cup mexican cheese

Directions

Boil salsa and water in large sauce pan. Add minute rice and remove from heat. Let sit 5 minutes or until rice has absorbed all the liquid. Rice will still be undercooked. Add corn and beans to rice, and cook on medium low heat until heated through and rice is tender. Stir in cheese and heat until cheese is melted.

Makes 4 servings.
