Introduction

adapted from a recipe using couscous when I found out I was allergic to wheat. adapted from a recipe using couscous when I found out I was allergic to wheat.
Number of Servings: 6

Ingredients

    1 cup dry Quinoa
    2 cup water
    1/4 c. lime juice
    2 Tbsp canola oil
    1/2 tsp cumin, ground
    1 1/2 c diced mango
    1 1/2 c diced pineapple

Directions

Put quinoa and water in pot to boil. Turn down to simmer and cover and cook until water is gone, 10 - 15 minutes. Meanwhile, mix all other ingredients. When quinoa is done, stir into the mixture. Refrigerate or serve room temperature.
