Ingredients

    1 can (15 oz) cooked pumpkin
    1 cup sugar
    1/2 cooking oil
    1 egg
    2 cups flour
    2 tsp baking powder
    1 tsp cinnamon
    1/2 tsp salt
    1 tsp baking soda dissolved in 1 tsp milk
    1 cup semi-sweet chocolate chips
    1 tsp vanilla

Directions

Makes 4-5 dozen cookies, nutritional information was calculated based on 4 dozen

Preheat oven to 375 degrees.
Combine pumpkin, sugar, oil, and eggs in a large bowl.
Stir together flour, baking powder, cinnamon, and salt in a small bowl.
Add dry ingredients to the pumpkin mixture along with dissolved baking soda and vanilla.
Mix well.
Stir in chocolate chips.
Drop by spoon onto greased or parchment paper lined cookie sheet.
Bake in 375 degree oven for 10-12 minutes.
