Introduction

I made these for my son's 2nd grade class - they are very easy, pretty nutritious and taste yummy! I made these for my son's 2nd grade class - they are very easy, pretty nutritious and taste yummy!
Number of Servings: 29

Ingredients

    1 C all-purpose flour
    1 C whole grain flour (I used oat)
    1 TBSP baking powder
    1/2 tsp ground cinnamon
    1/4 tsp salt
    2 TBSP unsweetened applesauce
    1/4 C ground flaxseed meal
    1 large egg
    1/4 C splenda sugar blend for baking
    2/3 C fat free milk
    1 C chopped apples
    1/2 C cinnamon chips (can substitute chocolate or other)

    For Topping:
    1/2 C finely chopped walnuts
    1 TBSP Splenda brown sugar blend
    1/2 tsp ground cinnamon

Directions

Preheat oven to 375 and grease mini muffin pan (recipe will make 29 mini muffins - filling cups full).
1. Whisk together fours, baking powder, cinnamon and salt.
2. In a separate bowl, mix applesauce, flaxseed meal, egg, sugar and milk.
3. Fold dry ingredients into the wet - stiring only until incorporated DO NOT OVERMIX (step away from bowl :-)).
4. Stir in chopped apples and cinnamon chips
5. Fill muffin cups (I used a scoop that is just over 1 TBSP)
6. Combine all topping ingredients and mix well. Sprinkle over muffins.
7. Bake about 15 minutes or until a knife inserted in the center comes out clean.
8. Cool on wire rack.
