Introduction

Delicious way to use up leftover roast pork. Delicious way to use up leftover roast pork.
Number of Servings: 4

Ingredients

    1 T olive oil
    1 medium onion, thinly sliced
    3 stalks celery, thinly sliced
    1 can bean sprouts, rinsed and drained
    1 can condensed mushroom soup
    1 c leftover gravy (I used turkey) or 1 small can chicken gravy
    1/4 c soy sauce
    8 oz leftover roast pork, trimmed of fat and cut in slivers

Directions

Heat olive oil in large skillet and add celery and onion. Stir and cook until onion is golden brown, about 6 or 7 minutes. Add soy sauce, mushroom soup and gravy. Stir in pork and bean sprouts. In a separate cup, mix cornstarch with 1/4 c cold water until thoroughly blended. Add to skillet. Bring to boil then reduce heat and simmer until thickened. Serve over brown rice.
Note: I served over spaghetti squash. Low fat soup and low sodium soy sauce would make this dish healthier, but I didn't have them on hand.
Makes 4 hearty servings
