Introduction

Number of Servings: 12

Ingredients

    I cup berries if large dice
    3 medium extra ripe bananas
    i cup plain lowfat yogurt
    1/4 cup canola oil
    1/2 cup brown sugar
    1 cup + 2 tbsp white flour
    2/3 cup whole wheat flour
    2 slightly rounded tsp soda

Directions

In small bowl mix together berries and 2 Tbsp white flour. Set aside.
In medium size bowl mix together the remaining dry ingredients.Set aside
In third bowl, mash bananas and mix well with yogurt and oil. Add in the mixed dry ingredients. Add the berries.
Mix only until moistened. Over mixing will make the muffins tough.
Divide evenly into 12 muffin cups.
Bake at 350 approximately 20 minutes.

    Ive made this recipe a few times now, they are so good, you dont feel guilty eating these, and Ive substituted apple for the berries and its also good that way. - 10/20/08
