Ingredients

    Boneless, skinless chicken breast
    Salt/Pepper (to taste...can use other seasonings)
    Hot Sauce (I like Frank's RedHot)
    2 Slices of bread (I use honey wheat)
    Light Mayonnaise
    Banana Peppers (I like vlasic mild pepper rings)

Directions

Cook one serving of boneless, skinless chicken breast, adding salt and pepper to taste (leftover grilled or baked chicken from last night works great!). Cut up the chicken and put it in a microwave safe bowl and pour as much hot sauce as you like over it, trying to evenly coat the chicken. If the chicken is cold (eg. leftovers), microwave the coated chicken until it's well-heated. If you're using chicken that is still hot from cooking, just microwave it for 25 seconds or so (until sauce is warm). Spread light mayonnaise on one slice of bread and add as many banana peppers as you like. Put the chicken mixture on top of the peppers, and top off your sandwich with the other slice of bread. Enjoy!
