Ingredients

1/2 lb ground sirloin
1/2 lb ground chuck (or 1/4 lb chuck, 1/4 lb lamb)
1 T Worcestershire Sauce
1/3 C Panko
Salt & Pepper to taste (add other dry seasoning as desired)
2 cloves garlic, minced
1/2 sm. white onion, chopped
1-2 stalks celery, chopped
3 T Extra Virgin Olive Oil
3-4 T catsup or cocktail catsup
Directions
Preheat oven to 450.
Saute onions, celery & garlic in olive oil until onions are slightly transparent.
Combine meat, panko, worcestershire, sauted veggies, & seasonings and form into a loaf (do not use a loaf pan).
Lightly grease a shallow pan (pie plate is ideal) and place loaf on pan. Brush catsup over the top of the loaf.
Bake for 15 minutes, then lower temperature to 325. Bake until internal temperature reaches 160 (approximately 45 minutes).
For best results, let the meatloaf rest, tented with aluminum foil, 1 hour before slicing.
