Introduction

Ingredients

    2 lbs. tenderloin
    2 tbsp. extra virgin olive oil (EVOO)
    1 1/2 cup beef broth
    1/4 cup sugar free blackberry jelly
    2 tbsp. vinegar
    1 tbsp. grated orange peel
    1 tbsp. flour (optional)

Directions

Preheat oven to 450 degrees. Brush EVOO on pork tenderloin and brown, over medium high heat, in a skillet, approx. 5 to 10 minutes. Take tenderloin from skillet and place in a pan. (Save the skillet and drippings for later.) Bake until meat is no longer pink in center, approx. 20 min. Remove from pan and tent with aluminum foil.

Place all drippings in skillet and warm over medium heat. Add broth and stir; add jam, vinegar, and orange peel. Simmer for 5 minutes. If the sauce needs to thicken, whisk in 1 tsp of flour.

Slice tenderloin and drizzle the blackberry sauce over the top. Serve warm.
