Introduction

Jicamas are available year round and can be found in Hispanic markets and most supermarket produce aisles. Jicamas are available year round and can be found in Hispanic markets and most supermarket produce aisles.

Ingredients

    1 medium jícama, about one pound2 small cucumbers, seeded and sliced into 1/4-inch slices3 seedless oranges, peeled, halved and sliced8 radishes, thinly sliced1/3 cup lime juice (2 limes)Salt2-3 teaspoons ground red chile1/3 cup chopped fresh cilantro

Directions

Peel jícama, cut in half, then slice 1/4-inch thick; cut slices in half diagonally. Toss jícama with cucumbers, oranges, radishes and lime juice. Season to taste with salt. Arrange on a serving platter, sprinkle with chile and garnish with cilantro. Serve immediately.

Serves 8.

    Oh I love Jicama and I always forget about it. Usually I just squeeze fresh lime juice on it and sprinkle it with chile powder.

    Good
    I love Jicama, but I'd rather just toss it with lime and sprinkle with chili powder. This one just didn't hit the spot. Was good, but not worth the extra work to me. - 12/20/10
