Introduction

A slightly lighter version. Half the oil and more servings makes each roti fewer calories.

Number of Servings: 12

Ingredients

    2 cups whole wheat white flour.
    2/3 cup water
    1/2 teaspoon salt
    1 Tablespoon oil

Directions

In a large bowl mix the flour and salt. Mix the oil and water together and add all at once to the flour. Stir with a fork until the mixture comes together in a ball. Knead for about 8 minutes or until smooth and elastic. Let the dough rest at least 10 minutes but more is better, like half an hour. Divide the dough into 12 balls. Roll each ball out into thin circles. Cook on a hot cast iron griddle. A few seconds on each side or until it gets bubbly and brown specks appear. If you have a gas stove, you can use a tong to hold the roti directly over the fire after cooking on the griddle. It will puff up and be tender and delicious.
