Ingredients

1/2 tsp oil
cooking spray
2 meduim potatoes washed and sliced thin
1 small onion cut in 1/2 and sliced thin
salt and pepper to taste
4 whole eggs
butter cooking spray (optional)
Directions
heat saute pan and add oil , spray with cooking spray add onions and begin to cook 1 minute add potatoe slices and season with pepper and seasoning salt (i use instead of regular salt) toss to coat and allow to carmelize stir occasionally but not to often because this slows down the browning and carmelization process
Once potatoes are almost done spray top of potatoes with butter flavored cooking spray crack eggs and drop onto potatoes in 4 areas spray with butter spray again season with pepper and place lid on allow to cook until eggs are done to your liking I cook mine around 3-5 minutes long enough for the whites to cook but yolk to be semi runny divide dish into 4 and enjoy
