Introduction
I'm making these for halloween to keep my inner tick -or -treater happy. When I start longing for a piece cup of carrot cake, I make these muffins. If I'm really indulging mysef I carefully layer the raisins and walnuts between drops of batter. WONDERFUL with a steaming mug of coffee. Ingredients

Optional: ingrediants:
14 toasted walnut halvess, broken into small pieces. 1/3 cup raisins, grated fresh ginger
Standard ingrediants:
1 cup whole wheat flour
1 cup white flour, preferably cake flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
1/4 tsp nutmeg
16 tsp Splenda brown sugar blend
3 eggs
1/2 cup oil
1 tsp vanilla
2 cups shredded and chopped carrots.
12 muffin pan liners
Directions
Mix all dry ingrediants including splenda and spices, reserving walnuts. Add carrots, optional fresh ginger, optional raisins, then add oil and eggs.
Divide batter into 12 regular muffin tins. Sprinke walnuts on top if using.
Bake at 350 until middle of a muffin springs back. Approx 20 minutes.
