Introduction

I created this out of a need to use leftover pasta... The rest of the ingredients are canned or frozen. I created this out of a need to use leftover pasta... The rest of the ingredients are canned or frozen.

Ingredients

    2 cups cooked Ronzoni Health Harvest Whole Wheat Blend Linguine (1/2 pkg)
    1 can Kirkland chicken breast (drained)
    1 Tbsp chopped garlic
    1 tbsp chopped Onions
    1 cup Cauliflower, frozen
    1 cup Broccoli, frozen
    1/2 cup Spinach, frozen
    3 Tbsp Walnut Oil
    1-2 Tbsp balsamic vinegar, to taste.
    1 oz Fat Free Crumbled Feta
    dash of red pepper flakes

Directions

Cook the linguini according to the directions, drain. Heat non-stick skillet over med-high heat, add oil, garlic & onion, sautee for a few minutes. Add the rest of the ingredients except the feta cheese and vinegar, cover and heat on medium until all veggies are cooked. Add feta and vinegar and stir well. Makes approx 6 cups (6 servings)

    I substituted 1 cup onions for the cauliflower, 1 cup peppers for the broccoli, and 1/2 cup cabbage for the spinach - 11/5/08
