Introduction

Great warm hearty soup for fall and winter days! Great warm hearty soup for fall and winter days!
Number of Servings: 8

Ingredients

    3 T Light Butter
    1 T Dry Minced Onion
    2 T Flour
    6 C Fat-Free Low Sodium Chicken Broth
    1/4 C Cornstarch
    1-1/3 C Mashed Potatoes (Dehydrated)
    4 Medium Baked Potatoes (shell off)
    3/4 C Fat Free Half and Half
    3/4 t pepper
    1/8 t dried thyme
    1/8 t garlic powder
    1/2 t dried basil

Directions

1. Bake 4 potatoes in oven (as normal)
2. Melt butter with onions until onions are lightly browned/softened
3. Add flour and some of the chicken broth - stir so flour is not lumpy
4. Add remaining chicken broth, pepper, thyme, basil, garlic powder, corn starch and mash potatoe flakes.
5. Bring to a boil
6. Reduce heat and simmer for 5-10 minutes
7. Remove contents of potatoes from shell and cut into small cubes.
8. Add chopped potatoes and fat-free half and half to soup mixture.
9. Bring to a boil and let simmer for 10-15 minutes or until thickened.

Makes 8 1-cup servings

1. Chopped green onions
2. Shredded cheese
3. Crumbled bacon pieces
4. Sour Cream
5. Croutons

    Very Good
    Very yummy. I messed mine up a little though because I didn't buy enough chicken broth so I used some water and milk but it still tasted great. I can't wait to make it the right way I bet it tastes 10 times better. My BF liked it as well which is amazing he never likes anything I make lol. - 11/25/08

    Wow I loved this one. My husband thought it was great too. I topped with reduced fat cheddar cheese, bacon bits and green onion.... great! - 11/6/08
