Cake
* Egg, fresh, 4 large
* Chestnuts, 60 grams
* Granulated Sugar, 0.25 cup
* Canola Oil, 0.25 cup
* Absolut Vodka (flavor you like), 1 tsp
* Milk, nonfat, 0.25 cup
* Flour, white, 0.25 cup
Icing:
* Whipped Cream, pressurized, 1.5 cup
* Chestnuts, 200 grams
* Powdered Sugar, 2 tbsp, unsifted
Directions
Ground roasted and peeled chestnuts into powder; ( you can buy the cooked chestnuts in bags from most Asian markets)
Mix milk, egg yolk, half of the sugar, oil, rum, flour and 160g chestnut powder together;
Bit egg white and remaining sugar to medium soft peak;
Mix egg white and yolk together;
Bake at 350 F for 35 minutes.
Put the cake in the fridge for 1 hour;
Whip the cream and sugar to hard peak and then mixed with 200g chestnut powder.
Keep the cream in the fridge for 1 hour.
Then the cake can be coated with chestnut cream.
Keep the cake in the fridge with a cover. It can be stored for 3~4days.
