Introduction

I love pasta and scallops. My 4 year old daughter loves peas. My husband loves bacon, as does my 3 year old son. So, one night I started creating. I had some cream that needed to be used and looked on Sparkrecipes and found something that gave me a start.....the chicken broth and garlic then the recipe just formed. My daughter had seconds! This makes 8 - 1C servings including the pasta. I love pasta and scallops. My 4 year old daughter loves peas. My husband loves bacon, as does my 3 year old son. So, one night I started creating. Ingredients

    -2.5 t minced garlic
    -1/2 c Fit and Active Chicken Broth
    -3 bags Simply Seafood Bay Scallops, 4 oz each
    -1 1/3 C frozen peas
    -3/4 C Heavy Whipping Cream
    -5T Hormel 50% less fat bacon bits
    -5T Parmesan grated cheese (I use Aldi brand)
    -1 13.25 oz box Ronzoni Healthy Harvest Rotini pasta

Directions

Start the water for the pasta first so you can throw the pasta in the boiling water at the same time you begin cooking everything else.

Defrost the scallops in the microwave. I have a setting that I just push a button and it doesn't take long. Drain them if necessary.

In a large skillet over med/high heat add 1/4 c chicken broth and garlic. Add more broth as broth boils away until you have added the full 1/2 cup, stirring to brown the garlic. Then add your scallops and peas. Stir until scallops are cooked, about 3-4 minutes. Add the cream and bacon and reduce the heat to med/low stirring constantly for about 3-4 minutes until the sauce thickens adding the parmesan cheese between stirs.

Pour the sauce on the pasta and stir again. Serve immediately.

Makes 8 one cup servings.

    Very Good
    I liked the recipe. Nice and simple and used up some scallops and cream I had. I added parsley, salt and fresh cracked pepper to the sauce and saved the bacon to sprinkle on top of the dish after serving so it stayed crunchy. I will make this again. - 6/24/15
