Number of Servings: 72

Ingredients

    1 pound - Raw ground pork
    2 pounds - Raw shrimp
    Half bunch of scallions - chopped
    3/4 can - water chestnuts - chopped small
    3 tbsp - Seseme oil
    3/4 cup - Soy sauce
    1.5 tsp - Ground ginger
    4 packages - Dumpling wrappers - found at any Asian grocery store

    1 Egg - mix with some water to seal dumplings

Directions

Use a food processor or chop the shrimp into small pieces. Mix all ingredients except the wrappers and egg together. Mix well!

Lay a few dumpling wrappers out and put about 1 tbsp of filling in the centre. Dip your finger in the egg wash and spread it lightly along half of the dumpling wrapper edge. Fold the dumpling in half and join the unmoistened side with the side with the egg wash. Press to seal.

Lay on a cookie sheet covered with wax paper and put in the freezer. Once frozen you can store them in freezer bags.

To cook:
Simply steam for 10 minutes. (I use a cheapy bamboo steamer)

I add a bit more soy sauce for dipping and voila!
