Introduction
Good comfort food for the blustery days of winter, or whenever you need a bit of a pick me up. I use Tofu Shirataki noodles from House brand for this, but plain spaghetti or udon noodles are good too (NI will change!). Ingredients

2 tsp tamari
2 cups "chicken" broth
1 tbsp seasoned rice wine vinegar
1 tsp brown sugar
1/4 tsp grated fresh ginger
1/2 tsp garlic powder
1/4 tsp red pepper flakes
1 oz So Soya slices (dry)
½ oz dried minced porcini mushroom
8 oz tofu shirataki noodles
3 oz baby spinach
Directions
Combine tamari, broth, vinegar, sugar, ginger, garlic and pepper flakes in a small pot. Bring to a simmer.
Add soy slices, mushrooms and noodles.
Simmer briskly, uncovered, 10 minutes.
Serve over baby spinach in a deep bowl and enjoy!
