Ingredients

2 cups brown rice
1 can (15 oz) organic soy beans - I used Publix Greenwise brand
1 cup baby carrots, chopped
1/2 large onion, chopped
1/4 cup celery, chopped
1 red bell pepper, chopped
2 Tbsp. Asian Sesame dressing (any kind you have on hand - I used Kraft)
1 Tbsp garlic powder
2 tsp. ground ginger
salt & pepper
Directions
Cook rice as directed. Rice takes 40-45 minutes to cook, so wait to start the stir-fry until rice is done. Add olive oil to saute pan or wok and heat over medium heat. Add chopped onion, red pepper, celery, and carrots.
Saute until vegetables are tender, about 5-7 minutes. Lower heat and add dressing and soy beans. Heat until warm. Serve over rice.
**Tip** I start the rice before I walk my dog and let it cook while we're walking. Then, when we're done walking, my rice is ready and dinner is done in no time!
