Be sure to thoroughly rinse the black beans as well as the corn before adding to the other ingredients. This dish is great as a garnish or a dip for tortilla or corn chips. Ingredients

    1 can black beans
    1 can sweet corn
    1 red bell pepper
    1 green bell pepper
    1 yellow onion
    Dried cilantro
    Garlic powder
    Salt
    Chili powder

Directions

Drain 1 can of black beans and rinse thoroughly. Repeat with 1 can of sweet corn. Add to a large bowl. Chop 1 cup of red pepper, 1 cup of green pepper, and 1 cup of onion in small cubes and add to bowl. Toss together. Add 2 tbsp dried cilantro, 1 tbsp chili powder, 1 tsp salt (or to taste), and 1 tsp garlic powder. Again toss. Add 3 tbsp extra virgin olive oil and 4 tbsp balsamic vinegar. Toss once more and taste. Add more seasonings if needed. Chill in fridge until ready to serve. FYI: Seasonings and vinegarette measurements are approximations. Season to taste.
