Introduction

Number of Servings: 8

Ingredients

    3 lb. Chicken breast, cooked, cubed
    3 Tbsp. Lemon juice
    1/2 tsp. Celery seed
    1/4 cup Kraft Miracle Whip Light
    1 cup Light Sour Cream
    1 cup Red Seedless Grapes, halved
    1/4 cup Sliced Almonds

Directions

Boil chicken until tender; about 30 minutes. Cube and place in large bowl.
Add lemon juice, stir.
Add celery seed, stir.
Add Miracle whip and sour cream, stir.
Add grapes and almonds, stir.
Refrigerate for 1 hour before serving.
Serve with flour tortillas or crackers.
Makes 8 1-cup servings.

Note: You can use precooked and cubed chicken to save time if you like.
You could also use fresh celery (1/2 cup) instead of the celery seed.
Original recipe also calls for 1/2 cup chopped red onions.

    I substituted FF plain yogurt for the sour cream and added additional 1Tab of Miracle Whip for a little added taste. I think next time I'll through some pineapple tibbets in too. - 8/10/09

    I made this today and it is really good. The only complaint I got from the grandkids is that it was a little dry. I only had a few grapes (not quite enough), so that was 1 reason. We loved it and will try again. - 11/12/08

    If it turns out a little dry, just use a bit extra sour cream. The light version won't really add that many cals per serving.

    Incredible!
    This is a wonderful light tasting chicken salad. It's great on sandwiches or with a green salad. My whole family--even my picky eater--loves it as long as I leave out the celery seed. I'm the only one who likes celery, so I add fresh celery to my own portion. - 11/10/08
