Number of Servings: 4

Ingredients

    8 oz. cooked angel hair pasta. Cooked to almost al dente. This will cook again for a few minutes with all other ingredients.
    3T extra virgin olive oil
    1T chopped onion
    .5 cup chopped scallions
    .25 cup green peppers
    2 cloves chopped garlic
    .25 cup baby spinach
    1 lb. large or extra large raw shrimp
    3T chopped fresh parsley
    1 cup white wine.

Directions

8 oz. cooked angel hair pasta. Cooked to almost al dente. This will cook again for a few minutes with all other ingredients.
While pasta is cooking:
Heat 3T extra virgin olive oil to pan.
Add onion, scallions, green peppers and chopped or grated garlic.
Cook approximately 5 minutes.
Add shrimp. Cook unitl firm and pink on outside, white on inside.
Add parsley, baby spinach and wine.
Cook together for about 2-3 minutes.
Add cooked angel hair pasta to pan.
Cook all ingedients together for about 2 minutes.
