Ingredients

    2 Tbsp Vegetable Oil
    1 large onion, chopped
    1 yellow pepper, chopped
    1 green or orange pepper, chopped
    1 red pepper, chopped
    2 Tbsp chili powder
    1 tsp ground cumin
    28 oz can crushed tomatoes
    10 oz box frozen corn
    1 can black beans
    1 can kidney beans
    1 can pinto beans
    2 tsp white vinegar

Directions

Combine all ingrediants into a crock pot.
Stir well.
Cook on high for 4 hours, or on low for 8 hours

8 large servings (yield about 1.5 cup pers serving)

Serve plain, or it is also great topped with shredded cheese. I like to eat mine with some tortilla chips too!

    I made this recipe tonight for dinner and it was great! I made a few modifications: We like SPICY so I added a can of green chilis, red pepper flakes, and a half tsp of montreal steak seasoning. I did not use the oil in the beginning- rather just sauteed garlic with the peppers & onion- AWESOME!! - 6/10/09

    Incredible!
    Really good and super easy! Basically makes itself in the crockpot! And add a little chili toppings like hot sauce, cheddar and sour cream and it is a hearty meal. Even better the next day! - 2/24/09
