Ingredients

1/4 cup rolled oats
4oz very hot water
8 oz plain yogurt
11/2 tbsp butter
3 tbsp brown sugar
11/2 tsp salt
3/4 tsp baking powde
3 tbsp wheat germ
3 tbsp flax seed (ground)
11/2 cup bread flour
6 tbsp bread flour
21/4 tsp yeast
1 tsp cinnamon
3 tbsp walnuts diced
Directions
use a bread machine to mix dough and bake in the oven.
put oats in the bread tin. add hot water and let sit for 15 minutes. put the remaining ingredients in the bread tin in the order written except for the 6 tbsp bread flour (set this aside). select dough cycle. while dough is kneading add remaining 6 tbsp bread flour a little at a time until dough doesn't appear too sticky (this is a heavy dough so it will be stickier than your average white bread). when cycle is complete place dough in a 1.5 lb loaf pan that has been lightly oiled and let rise in a warm place for aprox. 20 minutes (or until doubled in size) bake in a 350 deg oven for about 20 minutes. keep an eye on it because this bread tends to brown very fast.
this makes a 1.5 lb loaf and can be sliced anywhere from 10 to 18 individual servings.
