Easy to make lunches, fix a batch on Sunday and you'll have lunches ready to go all week.

Ingredients

    20 oz package of ground turkey breast
    1 package cooked frozen squash, thawed and drained
    1 cup finely chopped onion
    1 cup finely chopped bell pepper
    1/3 cup whole grain couscous
    1 large egg
    2 tbsp worcestershire sauce
    1 tbsp dijon mustard
    1/2 tsp salt
    1/2 tsp pepper
    BBQ sauce to top, OPTIONAL

Directions

Preheat oven to 400 degrees

Start by combining squash, bell pepper, and onion in a medium mixing bowl. mix in couscous, egg, worcestershire, dijon, and salt/pepper. Once thoroughly combined add turkey and quickly mix, being careful not to overwork the meat.

Spoon approximately 1/4-1/3 cup of meat mixture into regular sized non-stick muffin tins.
Top with 1-2 tsp BBQ sauce if desired (Not included in nutritional information).

Bake for 20-30 minutes until an interior temperature of 170 degrees is reached. Makes about 18 individual mini-loaves, 2 mini loaves per serving
