Introduction
This Italian Soup is really yummy...I've adapted to items I have available while living in Africa. This Italian Soup is really yummy...I've adapted to items I have available while living in Africa.Number of Servings: 6
Ingredients

1 lb. Italian Sausage (ground), (I use ground pork and add Sausage seasoning)
3-4 cloves garlic, minced
2 med. onions, chopped
2 large potatoes, peeled and diced
1 Tbsp Extra Virgin Olive Oil
3 cups water
2-3 tsp Italian Herb Seasoning
4 chicken bouillon cubes
1 can diced tomatoes with basil, garlic and oregano
1 can white beans (ie. great northern/white kidney)
3-4 cups chopped fresh spinach
1 cup light cream
Directions
Brown pork sausage, garlic and onion in skillet. Add olive oil and diced potatoes. Saute until potatoes are almost done. Add water, italian herbs, bouillon cubes, tomatoes, beans and spinach. Simmer until potatoes are done. Add cream and simmer 10 minutes. Makes 6-1 cup servings.
