Ingredients

Non-stick cook spray
Soy Chorizo (Vegan Chorizo)
1 large egg
3 egg whites from large eggs
2 six inch flour tortillas
1 oz mozzarella cheese, part skim milk
Directions
Heat a medium skillet and spray with non stick cooking spray.
Place 2 oz of the Soy Chorizo in the skillet and crumble. Allow it to cook to desired crispiness (since soy chorizo is not raw, you can take it off whenever you want). Set aside and wipe out skillet with a paper towel.
Spray skillet and add eggs. Scramble and cook until eggs are done.
Combine soy chorizo and eggs.
Warm tortillas, sprinkle with cheese, and fill with egg mixture.
Enjoy with your favorite hot sauce.

This is so good! My 8 year old son just ate two! (There’s enough for three as I make them). I use queso quesadilla since I live in CA and it’s easy to get here. If you can find it, use that.
