Introduction

A Japanese Treat! A Japanese Treat!
Number of Servings: 6

Ingredients

    1 bag of radishes
2/3 cup of rice vinegar (Nakano brand can be found in most big grocery stores)
    1/2 cup sugar
    a dash of salt

Directions

1) Wash the radishes, and slice them finely (you can also make little slices at the top in 90 degree intervals to make petals for radish blossoms)

2) Dry off the radishes and rub the salt over them. The let them sit for about 10 minutes

3) Mix together the vinegar and sugar until the sugar dissolves.

4) Shake off any excess water on the radishes and pour the vinegar "brine" over them. Let them sit in a bowl in the fridge for a few hours.

5) If you've opted to make radish flowers, crumble a little bit of boiled egg yolk on the center of each "blossoms" to give it some "pollen".
