Ingredients

    * Shirtaki Fettuccine Noodles
    * 1 tablespoon butter
    * 1/4 cup Unsweetened almond Breeze
    * 3/4 teaspoon all-purpose flour
    * 2 tbsp freshly grated Parmesan cheese
    * 2 ounces smoked salmon, chopped
    * 1/4 cup chopped fresh spinach
    * 1-1/2 teaspoons capers
    * 1 tablespoon chopped sun-dried tomatoes
    * 2 tablespoons chopped fresh oregano (2 tsp dried)

Directions

1. Prepare shirataki noodles (drain, pat dry, microwave 1 minute, pat dry again).
2. In a medium saucepan over medium heat, melt the butter, and blend with milk. Mix in the flour to thicken. Gradually stir in the Parmesan cheese until melted.
3. Crumble salmon into the butter mixture. Stir in the spinach, capers, sun-dried tomatoes, and oregano. Cook and stir about 3 minutes, until heated through. Serve over the cooked pasta.
