Ingredients

2 cans salmon drained
1/4 cup egg beaters
1 T olive oil
1 med onion chopped fine
1/2 cup instant potatoe flakes
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
Coating
1 cup bread crumbs
1 teaspoons dill
1/2 teaspoon pepper
1 egg white beaten lightly with 1 tablespoon water
Directions
Makes 6, 3 inch cakes
Cook chopped onion over low heat in 3Tablespoons of water until clear and tender (Add more water if needed)
Mash salmon with fork, add onions egg beaters, olive oil, instant potatoes and seasoning. Shape into 6 cakes.
Lightly beat egg white with water. Season bread crumbs for coating. Carefully dip cakes in egg white then in seasoned crumbs and place on sprayed baking sheet.
Bake at 375 degrees F. for 20 minutes, turning once
