Introduction

I threw this together with what we had in the fridge the other day. It came out really moist and tasty. I served it with roasted green beans and quinoa cooked in chicken broth w/ a little olive oil. Ingredients

    2 lbs 96 % Ground Beef
    1 cup Panko Bread Crumbs
    1 Large whole egg
    2 tbsp Chopped Fresh Thyme
    3 tbsp Chopped Fresh Parsley
    4 Cloves Garlic, grated/finely chopped
    1.5 cups Yellow Squash, shredded
    1 cup Zucchini, shredded
    1 Bell Pepper (I used green)
    1 Medium Onion, shredded/sliced thinly
    2 tbsp Olive Oil
    .25 cup Barbecue Sauce
    .25 cup Ketchup
    .25 cup Worcestershire Sauce
    .25 cup Tomato Paste
    .25 cup Balsamic Vinegar
    Hot Sauce, To Taste
    Salt & Pepper to Taste

Directions

1. On a cookie sheet, mix veggies (onions, zucchini, squash, bell pepper) with olive oil and roast in oven at 400 degree until desired doneness. I like my onions sweet, so I cooked until caramelization-15 minutes. I also used the shredder in my food process and ran all of the veggies through it rather than chopping them.

2. In a bowl mix -
ground beef, bread crumbs, egg, thyme, parsley, garlic, 1/2 of ketchup, worcestershire sauce, barbecue sauce

3. Combine with roasted veggies - mix well

4. Form loaf on sheet pan lined with parchment paper

5. Mix balsamic vinegar, and tomato paste. Spread on top of loaf for glaze.

6. Bake at 425 degrees for 1 hour. Makes 8 servings.

    Very Good
    The flavor was amazing but the meatloaf fell apart. THERE WERE NO LEFTOVERS THOUGH!! I will have to keep playing to see what I can do to make it stick together better... - 9/16/09
