Introduction

Ingredients

10 oz plain flour
2 tsp baking powder
1/2 tsp bicarbonate of soda
1/2 tsp salt
3 oz caster sugar
1 egg
1 cup milk
1 cup mincemeat
3 fl oz vegetable oil
3 oz sultanas
Directions
Prepare muffin tins. Heat oven to gas 5-6, (375-400 F / 190-200 C)
In a bowl sift all the dry ingredients (flour, baking powder, bicarbonate of soda, salt, sugar)
In a separate bowl (or large jug) beat egg with fork. Add milk, mincemeat and oil.
Pour into dry ingredients and stir until combined.
Add sultanas and finish mixing. Note that the mixture will be lumpy but this is fine as long as the flour is all mixed in.
Put into muffin tin and bake in the oven for 20-25 minutes.
