    Lentils, 1 cup
    Couscous (dry), 3/4 cup
    Onions, raw, 1 small Chopped
    Garlic, 4 cloves chopped
    Spinach, fresh, 1 cup
    Water, tap, 3 1/4 cup
    Salt, 1 tsp
    Olive Oil, 1.5 tbsp


Combine lentils, onion, garlic, water and salt. Bring to boil, reduce heat and simmer from 15 minutes. Add couscous, allow to absorb water. add spinach and stir to wilt.

Garnish with parmesan cheese (if desired).

  • I noticed that the ingredient list calls for olive oil but the instructions never noted when to add it. I omitted the oil and didn't miss it. That being said, the nutritional info will be different if you omit the oil. Oh, and I left out the salt too! - 12/10/09
