Introduction

Ingredients

    3 whole chicken breasts, skin on, bone in and cut in half (6 halves total)
    1 large sweet onion peeled and chopped
    1 large clove garlic peeled and chopped
    1 large can of crushed tomatoes (28oz)
    1 can of tomato sauce(16 oz)
    1 small can of tomato paste
    (I use Contatina brand tomato products. They produce the most flavorful results.)
    1 pound linguine (Barilla, DeVinci or other Italian brand)
    Romano cheese shredded (optional)

Directions

Place onion and garlic in a little olive oil and cook in a large pot. Simmer until tender.
Remove from pot and place into small bowl.
Brown the chicken and set aside.
Mix crushed tomatoes, tomato sauce and tomato paste into the pot.
Add the garlic, onions, and basil
Place chicken in sauce covering it with the sauce as well as possible.
Cook until mixture bubbles and then simmer for 1 3/4 hours.
Make the linguine according to package directions.
To serve place one cup of cooked linguine on a plate, cover with sauce, add chicken and serve.
Sprinkle with a little Romano cheese.
(Remove the skin of the chicken just before eating and place to the side.)
