Ingredients

    2 15oz. cans cannellini beans

    1 14 oz. can diced fire roasted tomatoes with garlic

    2 tbsp. canola or olive oil

    1 large onion, finely sliced

    1/2 yellow bell pepper, chopped

    1 tsp. granulated sugar

    Dried basil, oregano, freshly ground black pepper and garlic salt to taste

    Brown rice or whole grain pasta (Optional)

    Grated parmesan cheese and red pepper flakes (optional)

Directions

Heat oil in nonstick skillet. Cook onions and bell pepper until onion is translucent and lightly browned. Drain and rinse cannellini beans, then dump into skillet. Add canned tomatoes and their liquid to the pan. Sprinkle on sugar and season to taste with herbs listed. Let simmer on low heat for ten minutes to allow flavors to meld. Serve as is or over brown rice or whole grain pasta, topped with grated parmesan cheese and red pepper flakes if desired.

Makes approximately 5, 1 1/4 cup servings. (without rice or pasta)
