Number of Servings: 12

Ingredients

    1.5 cups Bran cereal (low fat)
    1 cup skim milk
    1 egg
    1 cup of cooked sweet potatoes
    3tbs lemon juice
    6 Tbs orange rind( about 2 oranges)
    1.25 cup of whole wheat flour
    .25 tsp salt
    1.5 tsp baking powder
    1tsp baking soda
    8 Tbs of Benefibre
    108 grams )2 scoops Myoplex Carb Sense protein powder, can use whatever kind as long as it is either fat free or really low fat and LOW carb with NO sugar.

Directions

Preheat oven at 400F.

In a large bowl pour milk onto cereal and let stand.

In another bowl mash enough sweet potato with the lemon juice to equal one cup.

Add potato mixture to the cereal milk combo, add beaten egg and remaining ingredients.

Spray muffin tin with Pam or other non stick low calorie spray and divide batter into muffin pan of 12

Bake approximately 25 or until toothpick/knife comes out clean. Let stand for 10 min before removing.
